Spinach salad pizza


I made this quick and healthy dish for dinner the other night and it was delicious! I thought you might like to have it as well. The recipe is actually arugula salad pizza but I substituted spinach instead because arugula salad is really high right now and I didn't have any coupons.

Prep time: 10 minutes Cook time: 25 minutes Serves: 4

Ingredients:
2 tbsp olive oil
4oz real salted butter (optional)
10oz button mushrooms, sliced
Salt
1lb. frozen pizza dough, thawed
8oz. mozzarella cheese, shredded
4 cups of baby arugula OR spinach leaves
2 tsp lemon juice
1 cup cherry tomatoes, halved
(I also bought whole tomatoes and sliced them because it is alot cheaper to buy the pack of four medium tomatoes than the cherry tomatoes)

1. Preheat oven to 475 degrees. Warm 1 tbsp. of oil in skillet over medium-high heat. Add mushrooms, sprinkling with salt (I also added 4oz of real salted butter for flavor) and saute until mushrooms release their liquid and are lightly browned, 5 to 7 minutes. Transfer to small bowl.

2. Press and stretch dough evenly to cover a 15-inch round perforated pizza pan. Scatter mushrooms over dough; sprinkle cheese on top. Bake until underside is golden and cheese is bubbling, about 15 minutes.

3. Toss arugula or spinach with remaining 1 tbsp olive oil, lemon juice and 1/2 tsp. salt. Arrange greens on top of pizza. Scatter tomatoes over greens. Return pizza to oven to wilt arugula or spinach. 2 to 3 minutes. Slice and serve. Enjoy!!
