All You magazine


If you are getting into couponing like the rest of the world is this will come in handy for you. If you go to Allyou.com you can request 2 FREE issues to try it out and see if you want to subscribe to it. That's what I did - if I find it worth the money then I will subscribe for the year. This is a good magazine because it offers some coupons that you can't get anywhere else.

Spinach salad pizza


I made this quick and healthy dish for dinner the other night and it was delicious! I thought you might like to have it as well. The recipe is actually arugula salad pizza but I substituted spinach instead because arugula salad is really high right now and I didn't have any coupons.

Prep time: 10 minutes Cook time: 25 minutes Serves: 4

Ingredients:
2 tbsp olive oil
4oz real salted butter (optional)
10oz button mushrooms, sliced
Salt
1lb. frozen pizza dough, thawed
8oz. mozzarella cheese, shredded
4 cups of baby arugula OR spinach leaves
2 tsp lemon juice
1 cup cherry tomatoes, halved
(I also bought whole tomatoes and sliced them because it is alot cheaper to buy the pack of four medium tomatoes than the cherry tomatoes)

1. Preheat oven to 475 degrees. Warm 1 tbsp. of oil in skillet over medium-high heat. Add mushrooms, sprinkling with salt (I also added 4oz of real salted butter for flavor) and saute until mushrooms release their liquid and are lightly browned, 5 to 7 minutes. Transfer to small bowl.

2. Press and stretch dough evenly to cover a 15-inch round perforated pizza pan. Scatter mushrooms over dough; sprinkle cheese on top. Bake until underside is golden and cheese is bubbling, about 15 minutes.

3. Toss arugula or spinach with remaining 1 tbsp olive oil, lemon juice and 1/2 tsp. salt. Arrange greens on top of pizza. Scatter tomatoes over greens. Return pizza to oven to wilt arugula or spinach. 2 to 3 minutes. Slice and serve. Enjoy!!

We're Expecting!

Well if you haven't heard the good news yet - Josh and I found out about two weeks ago that we are expecting! :) As of right now I am about 7 weeks along and slightly showing. I will also be posting pictures of my belly as I go through the pregnancy.
What about Haiti? Well, we are going to postpone our trip to Haiti until next year.

Palo Duro Canyon Trip

Josh and I decided that the weather has been so great in Lubbock the past few weeks that we would take a camping trip to Palo Duro Canyon for the weekend. I thought I would share our trip with you because this was the first time that Josh and I have done anything like this since we have been together. Keep in mind that I am the more "outdoorsy" type and he is the more "city boy" type, but he did exceptional and we had a wonderful and relaxing trip!

I consider it a good trip because we only experienced a couple of mishaps. One of which we came across as soon as we opened the trunk. We had stacked all of our supplies (chairs, tent, etc.) in the back of the Expedition and everything on bottom was wet. We forgot to plug the cooler so the melted ice had drained onto our stuff – whoops! Not a good start, but it could’ve been worse. We just hung all of our wet stuff from a tree and it was good to go after a while.

Before we did anything else, we set up camp and Josh and I had quite an experience trying to figure out where the last tent pole was supposed to go. We finally figured it out when we noticed there was no way to get into the tent, which is kinda the whole point of bringing a tent anyway.

The weather was beautiful so we took a nice hike through the canyon. We really didn’t cover much ground because we were mainly going up, but we were just trying to take our time and enjoy being away from everything. We started our hike on a widely-used path, but ended up making our own way through the terrain. It was wonderful! We read our Bibles and prayed for a little while when we found a flat area towards the top of the canyon.


Dinner was also really funny because there was a burn ban at the canyon. That meant we had to cook our hot dogs and beans over a really small flame. It took a while to cook it all, but again, we enjoyed not being in a rush.


We left the next morning just as it was starting to rain and stopped at McDonalds for breakfast. McGriddles – Yum!

Now this may seem like an overload on air freshener but with a baby on the way I suppose it will be much needed! Target's sale on Glade's spring collection was 2/$5 making them $2.50 ea. and you receive a $5 Target gift card back. Here's how you do it:

Sale price: $12.50 (5 cans)
Coupons: Target printable for $1.00 off & (4) $1.00 coupons for Glade air fresheners (makes a total of $5.00 off.)
Total price: $7.68 (with tax)
I used a $5 gift card I had from another purchase a while back making a my total $2.68
So I paid $2.68 Out of Pocket and received a $5.00 gift card - I made money and ended up spending $0.54 a can.
That is super cheap because they are originally $2.99 a can!!

Walgreens Deals

Today I spent a total of $3.15 on all of this.
I discovered an incredible deal while I was at Walgreens looking through my coupons.
Tide Stain Release was on sale for: $3.99 originally $4.49, but I discovered that I also had a coupon for Buy One Get One Free. I had 6 coupons total (3 BOGO and 3 $3.00 off) So this is what I did:
Bought 2 Tide stain releases at a time getting one FREE and using my $3 off coupon, making it $.99 for both bags.
I should have spent $26.94 (without tax) on just the Tide alone. Instead I got 6 for $3.15 and the rest was FREE or no money out of pocket.
It totalled $9.50ish but I had $10 in Register Rewards so it ended up being FREE!!

Delicious Apple Dumplings!

Now here's a recipe worth hanging onto and they are super easy!
There's something about the Mountain Dew that makes these apple dumplings so incredible.

Ingredients:
2 cans crescent rolls
2 gala apples - peeled (cut into 8 slices each)
1 1/2 cups sugar
2 sticks of butter
Cinnamon (to taste)
12oz can Mountain Dew

Directions:
Preheat oven to 350 degrees
Wrap each slice of apple in a crescent roll and place in two rows in the pan.
Once in the pan, dust cinnamon over the crescent rolls.
In the saucepan melt butter then add sugar, bring to a boil. Pour the mixture down the middle of the pan of rolls.
Pour the Mountain Dew around the edges of the pan.
Bake at 350 degrees for 30 minutes

So for this purchase I actually only spent $0.75 on all 5 items.
I used $4 in Register Rewards(RR) from my previous purchase and because I used 4 coupons on the snack bags (in-ad) and splenda already, I had to purchase something else so that I could use my Register Reward coupon. Walgreen's has a policy that you can't use more coupons than you have items so I got a 5th item (cadberry egg) so that I could use the RR.
